Pre-Rigor Salmon Pin Bone In

As our Sockeye Salmon is flash-frozen within a few hours after catch, it qualifies as “Pre-Rigor”. This means the fish is frozen before it reaches “rigor mortis”, a natural phenomenon which occurs 6 – 12 hours after slaughter. During rigor mortis, the fish is extremely stiff and cannot be processed. Thus, our “pre-rigor” salmon always comes with pin-bones in, as pin bones can’t be removed at this stage. Pre-rigor fillets are uniquely fresh: The muscle is flexible and naturally firm in texture!
