Pre-Rigor Salmon Pin Bone In (PBI)​

Our salmon is quickly frozen after slaughter, and it qualifies as “Pre-Rigor”. This means the fish is frozen before it reaches “rigor mortis”, a natural phenomenon which occurs 8 – 12 hours after death and may remain during 2 – 3 days. During rigor mortis, the fish is extremely stiff and cannot be processed. Thus, pre-rigor salmon always comes with pin-bones in, as bones can’t be removed at this stage. Pre-rigor fillets are uniquely fresh: The muscle is flexible and naturally firm in texture!
